With it, they are able to create an ultra-durable, double-sided edge that is ice tempered and hardened to a 56 – 58 Rockwell hardness, allowing the blade to remain sharp for much longer under normal use.

The hollow, sand-filled handles, allow each knife to be balanced with extraordinary precision, and the seamless transition from handle to blade not only makes the knife comfortable to hold, but it also prevents food from getting trapped during a good hand washing, which is recommended, since dishwashers can harm this beautiful knife.
